Dreamy Cream Scones
INGREDIENTS
2 C Unbleached All Purpose Flour
1 T Baking Powder
3 T Sugar
1/2 t Salt
5 T Chilled, Unsalted Butter in 1/4-inch Cubes
1/2 C Currants or Chopped Cranberries
1 C Heavy Cream
DIRECTIONS
1. Preheat oven to 425 degrees and adjust rack to middle position.
2. Place dry ingredients, except fruit, in food processor or bowl; whisk together. Cut in butter until mix resembles coarse meal; stir in currants or cranberries, then fold in heavy cream until a dough begins to form - about 30 seconds.
3. Transfer to countertop and knead until it comes together in a rough, sticky ball. Form scones by cutting dough into eight wedges.
4. Place them on ungreased baking sheet and bake until scone tops are light brown, about 12 to 15 minutes.
5. Cool on wire rack for at least 10 minutes. Serve warm or at room temperature.
