Coffee-Rubbed Cheeseburgers with Texas Barbecue Sauce

Freshly ground coffee adds a depth to the spice rub and brings out the flavor of the meat. Be sure to keep the rub recipe handy. The spice rub would also be great on steaks and chicken.

Ingredients

Makes 8

Coffee rub:

1 tablespoon freshly ground coffee
2 teaspoons (packed) golden brown sugar
2 teaspoons freshly ground black pepper
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/2 teaspoon fine sea salt

Burgers:

8 slices applewood-smoked bacon
1 pound ground chuck (preferably grass-fed)
1 pound ground sirloin (preferably grass-fed)
8 slices smoked provolone, smoked caciocavallo, or smoked Gouda cheese (about 8 ounces)
8 potato-bread hamburger buns

Toppings:

8 slices red onion
8 slices tomato

Preparation

  1. For coffee rub:

    Step 1

    Mix all ingredients in small bowl. DO AHEAD: Can be made 1 week ahead. Store airtight at room temperature.

  2. For burgers:

    Step 2

    Cook bacon in large skillet until crisp. Transfer to paper towels to drain. Break in half. Gently mix chuck and sirloin in large bowl. Form meat into 8 patties, each 3 1/2 to 4 inches in diameter and 1/3 to 1/2 inch thick. Using thumb, make slight indentation in center of each burger. DO AHEAD: Burgers and bacon can be prepared 8 hours ahead. Cover separately and chill.

    Step 3

    Prepare barbecue (medium-high heat). Sprinkle 1 teaspoon coffee rub on top side of each burger. Place burgers, rub side down, on grill rack. Grill until slightly charred, about 4 minutes; turn.

    Step 4

    Place 2 bacon slice halves atop each burger. Cook 3 minutes.

    Step 5

    Top each with 1 cheese slice. Cover and cook until cheese melts, about 1 minute longer. Place burgers atop bottom halves of buns. Top with onion slices and tomato slices. Spoon dollop of Texas Barbecue Sauce over. Cover with bun tops and serve, passing additional sauce alongside.

  3. What to drink:

    Beer is a natural pairing for a burger. Keep the southern theme going by pouring a Texas brew. We like the caramel sweetness and mild hoppy flavor of Shiner Bock ($8 per six-pack).

Test-kitchen tip:

Making a small indentation in the center of the patty before cooking ensures a nice, flat burger.

  • This meal was a delight. Followed instructions to the tee. I like spicy but the kids don't so I made the sauce 2 times and added spice to mines and took out the heat for the kids. Kids are the biggest critics, so, I know it was a good meal because they asked for seconds and thirds. I added honey to the sauces too. Everything was exquisite tasting.

  • Since I actually used my own burger recipe, I won't leave a rating, but Oh My God... that coffee rub is absolutely to die for. This is seriously the best rub I have *ever* tried, and I'm sure it would be amazing on all kinds of things, from chicken to ribs, and everything in between. Sometime if I'm feeling both flush and energetic, I'll try this rub with the recipe it was intended for, it looks wonderful.

  • This is a great recipe. It contains a good choice of ingredients and good tips on how to exactly cook a burger. I usually use Austin's Own BBQ sauce...it's a versatile Texas BBQ sauce. Coffee pairs well with beef, I have been using fresh ground dark coffee in my brisket rub for years and it goes great with these burgers as well. If you are going to this much trouble to buy fine ingredients, don't use gas grills or lighter fluid. Stick to natural lump charcoal and use a chimney to heat the coals and you should come out with an awesome tasting burger.

  • Love this flavor combination and the rub gave the burger a nice crunch. To save time on the BBQ sauce, I used Judge Cline's #9 Sauce and mixed some in the ground beef too for a little extra heat.

  • I like the sauce, its a good burger. I would use more than 1/4 pound beef per burger with all the flavors I thought the beef flavor got a little lost. Our guests overwhelmingly liked the Grilled Italian Burger recipe from this site much better. Also, for a coffee rub, try the Cowboy Steak from this site you won't be disappointed.

  • Outstanding! The combinations of flavors cannot be substituted. I used a french roast coffee, freshly ground, of course. Do not miss the barbeque sauce. All in all, a sensational burger.

  • This is our favorite recipe for grilled burgers. Great, interesting taste. I keep the dry rub handy for steaks, too.

  • Great spice rub, but really need to use good quality ground coffee and unrefined brown sugar. Use blue cheeze and avo for a bacon and blue cheeze variant (very nice). Additionally I add chilli caramelised onions (sugar added) which brings out some extra flavours.

  • Really great burger! I thought it sounded weird with the coffee rub and all, but after reading so many reviews and my wife being a coffee lover I had to give it a try. The wife said "This is the best burger you've made yet". So definitely will be making this again. I doubled up on the rub, used smoked gouda cheese and the sauce recommended on this site. I did not have time to carmalize the onions as other reviewers suggested, but am definitely going to try that next time.

  • Great rub. My boyfriend doesn't drink coffee and thought the rub sounded "weird" but now he asks for these burgers all the time. I have also used the on tri-tip and pork tenderloin and both were excellent. Typically, I use smoked gouda for the cheese which I think works great.

  • These were amazing! And that's coming from a former vegetarian. I did do a few tweaks...I used 1 lbs grass fed organic beef packed into 3 patties. I used the full amounts for the rub and made sure to give each side of each burger a good coating. I also took a yellow onion and carmelized it in the bacon drippings. Topped it off with some Sweet Baby Rays tangy BBQ sauce and it was so delicious. I did use some smoked mozzarella on two for the cheese lovers but found that I wouldn't have even noticied had I skipped that part. Overall, this is now my go-to burger recipe for years to come. Highly recommended.

  • Oh my gosh! This was absolutely delicious! This is the best burger I've ever made! Must curb enthusiasm...but really this was so awe inspiring and I'm not a huge burger fan. The coffee rub can be tweaked depending on the spices you have available. I didn't have freshly ground coffee so I had to use instant (blah) and I can only imagine what it is going to taste like when I get beans. I caramalized my onions as per other reviewers but this burger could stand alone without condiments and be great. Gonna try it with steak tonight.
